Tasting notes: Deep ruby wine, with fresh red and black cherries dominating on the palate, rounding off to a savoury, creamy black olive finish with a touch of white pepper from the high proportion of Syrah. 

Drink with: Fantastic with meats, anything grilled or Mediterranean in flavours, tomato sauce pasta, oregano, sage, rosemary and thyme. Serve at 18C.

Winemaking notes: From vines grown at 400m of altitude on a northern hillside surrounded by woodland. Grapes are partly destemmed and crushed, with half the wine aged in concrete and the other half in large oak barrels (demi-muid). The wine itself decides how long the ageing process should last, on average typically 15 months.
