Organic and biodynamic
From argilio-calcaire soils, fermented using indigenous yeasts and matured on lees from between 12 to 24 months. Made using the champagne method. Red apples and minerality, indistinguishable from champagne when tasted blind. Terrific value.
Have as an apéritif, with oysters, shellfish. Serve at 5-8 C.
