Tasting notes: Honeyed crisp pear, almonds, nectarines and a little peach, narrowing to a lime zest finish. Round, full-bodied and weighty fatness on the palate, with a little sea spray coming in at the end. 

Drink with: Great on its own as a refreshing aperitif. Have with soft creamy cheeses like Brie, Camembert, or fresh crunchy salads. Absolutely outstanding with pork of any form, especially roasted or braised pork belly (Western or Asian styles) Serve at 10C.

Winemaking notes: From vines grown at 400m of altitude on a northern hillside facing the village of St-Maurice. Uniquely, fermented in a mix of demi-muids (600 litre oak barrels, creating wonderful oak integration in the wine), and egg-shaped ovoid tanks (the shape creates a continuously circulating current in the fermentation tank, which builds texture and flavour in the wine).
